Rich Brownies.

This is my go-to brownie recipe and believe me when say, it is THE BEST BROWNIE RECIPE EVER!!

I'd first tried these when I was new to baking, not that I'm any less a newbie now, but this was my first experiment with the oven. This is Nigella Lawson's recipe from her television series. I fell in love with the brownies when i saw them on television..they look SO good and taste even better. You'll reach brownie heaven in just one bite. They're so heavenly, consuming them should be a sin.

I could go on and on and on about how good these brownies are. I've never tried any other recipe because everyone loves these so much. And my foodie friends at college, who I took a few for this morning, loved them too. So, you see, I haven't had the need to turn to any other brownie recipe..hehe. You should really give these lovelies a try.

Okay then, I've tweaked the recipe to my taste. Instead of going the whole hog and using only dark chocolate, I use cocoa and semi sweet chocolate. I add only white chocolate chips and don't add any semi sweet chocolate chips.

TRIPLE CHOCOLATE BROWNIES.
Recipe Adapted from: Nigella Lawson.

200 g cocoa
150 g semi sweet chocolate
375 g butter
350 g sugar

4 eggs
225 g all purpose flour
1 tbsp vanilla extract
1/2 tsp salt
100 g white chocolate chips
1 tbsp confectioner's sugar (for garnish)

Method:

1) Preheat the oven to 176 degrees C (350 degrees F). Line a baking tray with parchment.

2) Melt the butter, cocoa and semi sweet chocolate in a sauce pan. Let it cool for a bit

3) Add the eggs, one at a time, whisking well after each addition.

4) Stir in the vanilla extract and salt.

5) Add the sugar and stir until completely incorporated.

6) Next, add the flour and stir until no white speck is visible.

7) Gently fold in the white chocolate chips. Do not whisk.

8) Pour the mixture into the prepared tin and bake for 25 minutes. You will know when the brownies are done as the top becomes a little dry and a shade lighter than the rich, dark, dense and gooey inside.

9) Let the brownies cool a bit. Cut them in squares (or whichever shape you like) and serve with a dusting of confectioner's sugar.

NOTE:

1) You could you dark chocolate instead of cocoa and add semi sweet chocolate chips along with the white chocolate chips.

2) I've used salted butter and still add the salt. The salt gives it that something extra.

3) In case you are using unsalted butter, add in a teaspoon of salt, instead of just half.

4) You could add your favourite nuts, butterscotch bits or anything you like. I once added about 2 tbsp of Nutella. And you could also eat them with ice cream and pour some chocolate sauce over the brownies too!!!

I hope you enjoy making these wonderfully indulgent brownies and more importantly, enjoy eating them. My biggest advice would be, DON'T STOP AT ONE! ;)

Happy Baking!
